Carrot Cake Bites
These delightful little treats taste pretty much like carrot cake mixture, but are super healthy! Perfect for an Easter treat - or enjoy them all year round!
  • 1 medium carrot, peeled
  • 1 cup oats
  • ½ cup walnuts
  • ½ cup dates
  • ¼ cup desiccated coconut
  • 2 teaspoons chia seeds
  • 1 teaspoon mixed spice
  • ½ teaspoon ginger
  • ½ teaspoon cinnamon
  • 1 tablespoon honey
  1. Place carrot in food processor and mix for 10 seconds, until chopped finely.
  2. Add oats, walnuts, dates, coconut, chia seeds, spices and honey. Mix for 30 seconds until it all comes together. Add a touch of water if you need a bit more moisture.
  3. Press spoonfuls of mixture into a mould, or roll into balls, using a little extra coconut to bind, if needed. Chill.
