Chocolate Banana Cake

Not only rich & delicious - this recipe is free from gluten, dairy & refined sugars! I've included a standard version, as well as instructions for using a Thermomix ๐Ÿ™‚
Ingredients
  • 2 medium over-ripe bananas (300g)
  • 2 eggs
  • ½ cup (100g) light olive oil
  • ⅓ cup (100g) honey
  • 1½ cups (170g) gluten-free plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarb soda
  • ½ cup (35g) cocoa
  • 1 teaspoon vanilla essence
  • ¼ cup hot water

  • Icing
  • ⅓ cup honey
  • ½ cup cocoa
  • hot water
Instructions
  1. Standard version:
  2. Preheat oven to 180 degrees Celsius/160 fan-forced.
  3. Place banana in a large bowl and mash well. Add eggs, oil and honey then mix well until quite smooth.
  4. Add remaining ingredients and mix well.
  5. Pour into a lined baking tin or greased Kugelhopf.
  6. Bake for 40 minutes or until cooked through.

  7. To make icing: heat honey in microwave for 20-30 seconds. Add cocoa and enough hot water to reach desired consistency. Spread over cooled cake.


  8. Thermomix Version:
  9. Preheat oven to 180 degrees Celsius/160 fan-forced.
  10. Place bananas, eggs, oil & honey in Thermomix bowl and blitz for 5 seconds/speed 5.
  11. Add remaining ingredients and mix 10 seconds/speed 5.
  12. Pour into a lined baking tin or greased Kugelhopf.
  13. Bake for 40 minutes or until cooked through.

  14. To make icing: heat honey for 1 minute/100 degrees/speed 2. Add cocoa and mix 5 seconds/speed 2, with enough hot water to reach desired consistency. Spread over cooled cake.
